    Some restaurants feel like they’ve been part of a neighborhood forever, and in a way Cipolline has been, as this is the second time this restaurant has been in  this spot.

    Tucked into the Curve District of Palm Springs, Cipolline exudes warmth. The night I visited, the atmosphere was buzzing—not too loud, not too quiet. Just right. Dim lighting, exposed brick, and warm wooden tables set a relaxed and intimate mood, making it a perfect spot for both date nights and casual get-togethers. As I sipped my Mezcal Negroni, a singer with a voice eerily reminiscent of Frank Sinatra crooned in the background, setting the perfect scene for a Friday date night. The service was just as inviting—attentive but never intrusive. Our server, who had a knack for dad jokes, kept us entertained every time he stopped by, adding a touch of humor to the evening.

    We were seated in the bar/lounge area when a Canadian couple turned to my husband and asked, “Are you two twins?”—a question we get more often than you’d think. I was on my second cocktail of the evening and was very tempted to respond, “No, but we share a lot of DNA.” Somehow, I managed to keep that zinger to myself.

    Cipolline Osteria is owned by the same team behind both El Mirasol and El Mirasol at los Arboles, two of Palm Springs’ beloved Mexican restaurants. Known for their warm hospitality, the owners have brought back their expertise and passion for great food into this Italian venture.

    I’ve love a Negroni and I love Mezcal. The combo of the two is probably my favorite cocktail so I was very pleased to see it on the menu. The smoky depth of mezcal added intrigue to the usual bitter-sweet Campari and vermouth mix. It was strong but balanced, a drink that can truly be savored. It had been a long day and I was really looking forward to this cocktail, luckily it shined.

    I’m a bit of a purist when it comes to Caesar salads. This one checked all the right boxes. Crisp cold romaine, a dressing rich with umami, house-made croutons that shattered with every bite, and  my favorite briny, meaty white anchovies. FLAWLESS!!!

    If you judge an Italian restaurant by its pasta (and you should), Cipolline more than delivers. Their house-made tagliatelle was cooked to a perfect al dente, with just the right amount of bite. The ragĂą was deep, meaty, and balanced with acidity, coating every strand of pasta without drowning it. I have worked in some great Italian restaurants and this ragu was a fine example. The tagliatelle al ragĂą has roots in Bologna, where the tradition of slow-simmering meat sauces dates back to the 18th century. Here, Cipolline keeps that tradition alive, honoring its heritage with a beautifully executed dish.

    Our waiter tricked us into ordering dessert —and I’m glad he did. This chocolate budino was very smooth and velvety, with an intensely rich chocolate flavor. The acidity of the berry compote contrasted perfectly with the richness of the dessert, keeping it from feeling too heavy. The espresso-infused whipped cream added a light bitterness that balanced everything beautifully. The contrast of flavors and textures—the creamy pudding, airy whip, and sharp sugary berries—made every bite an indulgence.
